Shravan Special: Vegetarian Mexican Recipes

Vegetarian month of Shravan is here! Festivities, love, and celebration are in the air. Aroma of delicious sweets and traditional recipes lingers around. It could be a challenging time for our non-vegetarian friends though. One month without meat?! Does that worry you as well? We have fantastic, quick, easy and delicious recipes that can double as lunch and dinner. Take a look at these vegetarian mexican recipes!

Veg Burrito

  • 2 Chapatis (Whole wheat or Maida)
  • ½ cup black beans
  • Red onion, diced – 2 tbsp
  • Jalapenos, diced – 2 tbsp
  • Sweet corn, boiled – 2 tbsp
  • Coriander leaves, chopped – 2 tbsp
  • ¼ avocado, diced
  • 2 tbsp sour cream or thick yogurt
  • 1 lime, juice and zested
  • Cheddar, shredded – 2 tbsp
  • Mozzarella, shredded – 2 tbsp
  • Salsa sauce – 2 tbsp
  • Oil – 2 tbsp
  • Salt
  • Pepper
  • 2 tsp Tex-Mex spice mix: Paprika, Coriander powder, Cumin powder, Onion powder, Garlic powder, Thyme leaves, Salt

For tex-mex spice mix, mix all the spices in equal proportions. Store in a dry, airtight jar.

  1. In a pan, heat oil. Add black beans, corn, jalapenos, onions and tomatoes. Toss for 2 minutes.
  2. Add tex-mex spice mix. Add cilantro, lime juice and zest, salt and pepper.
  3. In a chapati, arrange all the ingredients. Wrap up nice and tight. Toast on a pan for 4 minutes on each side.
  4. Serve warm.


Mexican fried rice

  • 2 cups cooked long grain rice
  • 1 small onion, diced
  • Black beans, cooked – ½ cup
  • Corn – ¼ cup
  • Tex-mex spice mix – 2 tbsp
  • Coriander, chopped – 2 tbsp
  • Green onion, chopped – 2 sprigs
  • Garlic, minced – 2 cloves
  • 1 lime, juiced and zested
  • Oil
  • Salt
  • Pepper
  1. Heat oil in a pan. Add garlic, onions, beans, corn and Tex-mex spice mix.
  2. Add rice, chopped coriander, salt and pepper.
  3. Serve hot.


Veg Nachos

  • 1 pack Nacho chips
  • Bell peppers, diced – ½ cup
  • Tomatoes, diced – ½ cup
  • Red onion, diced – ½ cup
  • Green Onion, chopped – ¼ cup
  • Jalapenos, diced – 2
  • Coriander, chopped – 2 tbsp
  • A pinch of Tex-mex spice
  • Cheddar+Mozzarella shredded – 1 cup
  1. Turn oven on and preheat to 400°F.
  2. On a sheet pan, arrange a handful of nacho chips. Add all the vegetables, and cheese. Repeat the same by adding another layer of chips, veggies and cheese.
  3. Bake in the oven for 6 to 8 minutes.
  4. Sprinkle some tex-mex spice mix.
  5. Serve hot with salsa.

Homemade Salsa

  • 1 kg fresh tomatoes, seeds removed
  • 2 jalapenos
  • ½ onion
  • Coriander leaves – ½ cup
  • Cumin powder – 1 tsp
  • Salt
  • Pepper
  1. Preheat oven to 375°F.
  2. Roast tomatoes, onions, jalapenos in the oven for 12 to 15 minutes.
  3. Add roasted vegetables, cumin, coriander, salt and pepper to a food processor and buzz for 10 seconds.
  4. Keep it chunky.
  5. Check seasoning and store in a glass jar in the fridge.
