Wedding Bells: Mothers’ (in-law) Day Special

As a daughter, I am sure the thought of getting married brings diverse feelings in your mind. Every maternal aspect now makes emotional. All the brides of 2018-2019, this mother’s day is so special to you all like none other. You admire your mom so much more and so many different ways. Your mind is occupied with ideas about how to make it perfect for your mommy dearest. Well, nothing wrong with that. There’s a reason we, daughters, are so special to our parents. The unconditional love, intense support and loyal gratification that daughters proffer, is unparalleled.

However, girls, let us not forget that you are a prominent part of the new family. While everybody is overjoyed to welcome the newest member of their family, you are being to put to the test, knowingly or unknowingly. And this isn’t an untold secret. To make sure you excel at this ‘test’, we have some special mothers’ day ideas. We are sure you are all sorted and ahead of your game for celebrating it with your mother. But why not earn some brownie points by making it perfect for your mother-in-law?! After all, this day is about celebrating motherhood!

 

Cook it up, buttercup!

Everyone loves when the new bride cooks them a meal. And because you are a 21st-century woman, you gotta keep trendy, young lady! A Sunday Brunch sounds more than perfect, isn’t it! Needs a bit of planning, but that’s why we are here. You still got enough time to shop and plan for the coming Sunday.

When we say brunch, all we can think of is some refreshing Sangria or Mimosa with Eggs Benedict or Frittata. Here are the recipes for these dishes. So plan and make your shopping lists accordingly. Oh, and don’t forget to buy a nice card, flowers, chocolates and candles. We all love that!

Mimosa

Ingredients:

2 parts Sparkling Wine
1 part Blood Orange Juice
1 part Orange Juice

Method:
When you’re making a mimosa, always add the sparkling wine first.  Tipping the glass as you pour will keep more bubbles intact.  Next, add the juice and serve immediately.

White Wine Sangria

Ingredients:
750 ml (1 bottle) White wine, Chardonnay or Sauvignon Blanc (Can also use sparkling wine)
1/2 cup Triple Sec or Grand Marnier or Cointreau
1 Orange, sliced
1 Lemon, thinly sliced
1  Sweet Lime, thinly sliced
10 strawberries or Blueberries, fresh
2 liter Sprite or Ginger Ale

Method:
In a large pitcher mix together white wine, triple sec, orange slices, lemon slices, lime slices, and strawberries.  Set in fridge for at least 4 hours.
Pour in sprite or ginger ale, stirring to combine.
Pour over ice to serve.

Frittata

Ingredients:
1 tsp Oil or Ghee
¾ cup Broccoli florets, small pieces
1 Red bell pepper, medium dice
¼ cup Red onion, chopped
2 tsp Garlic, minced
4 Eggs
4 Egg whites
¼ cup Milk
1/3 cup shredded or diced cheddar cheese
Fresh herbs for garnish such as chopped cilantro parsley or green onion
Salt and pepper to taste

Method:
Preheat the oven to 375 degrees.

  1.  Heat oil or ghee in an 8-inch pan over medium-high heat. I personally prefer using a cast-iron pan that is well seasoned. You can use any other pan, make sure it is greased evenly.
  2. Add broccoli and peppers, sauté for 2 minutes on high heat.
  3. Mix in onions and minced garlic. Season the vegetables to taste with salt and pepper.
  4. Remove the vegetables from the pan and wipe the pan clean with a paper towel.
  5. Coat the pan with cooking spray, oil or ghee.
    In a bowl, whisk together the eggs, egg whites, and milk. Season to taste with salt and pepper.
  6. You can now add the vegetables and cheese to the egg mixture and stir until combined.
  7. Pour the egg mixture into the pan and place in the oven.
  8. Bake for 15 minutes or until center is set. Garnish with fresh herbs, cut into wedges and serve.
