Let’s hang the curd – Shrikhand delicacies

With the arrival of Ganpati Bappa, we are all excited and loaded with sweets- especially Modaks. Bappa’s favorite treat is accompanied by 4 other types of sweets, usually, one of which is Shrikhand. Shrikhand is made from hung curd. Yogurt is tied and hung in a muslin cloth overnight to drain out all the liquid. What we are left with is this creamy dairy full of probiotic bacteria. Absolutely cooling on your system. Common Shrikhand flavors are Kesar, badam, mango, etc.

Like most of us, if you are entertaining a bunch of guests, and you want to look different or you wish to do something creative besides the traditional Maharashtrian meal, we got you covered. We have these two unique yet easy recipes that will earn you the title ‘Master Chef’.

1. Dahi Ke Kebab

This is a savory recipe. Spicy, sour yogurt kebabs are deep-fried and served with tamarind-dates chutney. An excellent appetizer or finger food. You may present them on a platter with a side of dipping sauce or in petit shot glasses. The richness from yogurt really pairs well with the tart yet sweet chutney. Together, they tickle your taste buds and we bet, you can’t just eat one!

Ingredients:

2 cups curd or yogurt thick and fresh
1 cup paneer crumbled
½ small onion finely chopped
Ginger finely chopped – 1-inch
1 green chili finely chopped
2 tbsp coriander leaves finely chopped
salt to taste
2 tbsp besan
¼ cup bread crumbs
2 tbsp cornflour to dust patties
Oil for deep frying

Method:

  • Hang yogurt in a cheesecloth/ muslin cloth, preferably overnight.
  • Take this hung yogurt in a bowl and add 1 cup crumbled paneer. Also add onion, ginger, chili, chopped cilantro. Add 2 tbsp besan and breadcrumbs.
  • Season with salt and pepper.
  • Mix gently, do not knead. If the dough is too sticky, then add more of breadcrumbs or besan to absorb moisture.
  • Form small balls of the size of a golf ball. Dust them in corn starch.
  • Heat oil in a wok. Deep fry in hot oil. Or the yogurt will disintegrate in the oil.
  • Get a nice golden color on the outside.
  • Serve with tamarind-date chutney.

2. Shrikhand – Motichoor Parfait

Especially those delicious laddoos. Nobody likes to pick up the leftover crumbs and finish them off. But, since we’ve made them with so much love and efforts, why let it go to waste? Make something amazing out if it! How do you ask? Here’s how:

How about layer them in a fancy petit dessert cup with your favorite things!!! Nuts, sponge, toffee, pralines etc. Here we have layered crushed motichoor laddoos and paired it with kedar-badam shrikhand. We also layered it with chopped salted almonds.
