A sudden thunder, a flash of lightning, roaring winds and a pleasant aroma of earth – finally, the season is here. Our beloved Monsoon! Chai, samosa and pakoras are at the top of our monsoon special recipes. Waterfalls, treks, picnics occupy our ‘free’ time. As Indians, popularly, our lives revolve around food. And we definitely do not want to miss out this opportunity to enjoy some greasy, spicy, namkeen kinda food!

Here are three offbeat monsoon special recipes that will make you a rockstar chef! Be it family gathering or a friends’ night out. We all love some fried food to go with our drinks and chai!

Jalapeno corn Pakoras

Offbeat monsoon recipes

There are many yummy spicy corn recipes in monsoon special recipes, but once you make these fritters, you cannot stop licking your fingers!

Ingredients:

  • 2 corn cobs (roughly 2 cups corn kernels)
  • 6 to 7 jalapenos, chopped
  • 1 cup besan flour
  • ½ cup rice flour or cornstarch
  • 1 tsp ginger-garlic paste
  • ⅛ tsp turmeric powder
  • ⅛ tsp Kashmiri red chili powder
  • Pinch of garam masala
  • cumin seeds ⅛ tsp
  • ⅛ tsp fennel seeds
  • carom seeds ⅛ tsp
  • ⅛ tsp sesame seeds
  • Oil for frying

Method:

  1. Mix all the above ingredients in a bowl. Add water to form a thick, tacky dough like consistency.
  2. Rest for 15 minutes.
  3. Heat oil in a wok. Release 1 tbsp of the pakora mix in the oil, gently. Fry for 6 to 7 minutes on medium high heat. Look for a golden colour on the outside.
  4. Serve with sweet tangy tamarind chutney.

P.s: If you like it spicy, keep the seeds of jalapenos. Or else discard before adding it to the mix. If you cannot find jalapenos, add ½ green pepper and 2 spicy green chilies, finely chopped.

Monsoon special Mutton Samosas

Offbeat monsoon recipes

Ingredients:

  • 250 grams mutton kheema
  • 1 onion, finely chopped
  • 1 tbsp ginger-garlic paste
  • ¼ tsp turmeric powder
  • 1 tsp Kashmiri red chili powder
  • 2 tsp coriander powder
  • 1 tsp garam masala powder
  • 1 tsp cumin powder
  • Salt
  • 5 sheets of samosa pastry
  • Oil for frying

Method:

  1. Marinate mutton kheema using all the above ingredients but onions. Rest in fridge overnight or at least 3 hours.
  2. Heat some oil in a pan, add onions. Sauté until brown.
  3. Add marinated minced mutton. Cook on a low heat until cooked. Make sure it is dry.
  4. Garnish with some chopped cilantro.
  5. Cool down before filling up samosas.
  6. Using a samosa pastry, form a cone – and fill about 2 tbsp mutton mince in the samosa. Seal the edges using either water or whisked egg.
  7. Deep fry until golden brown. Serve with a sweet spicy chutney on side.

Offbeat monsoon recipes

Ingredients:

  • 500 g chicken wings or lollipop
  • 2 cups buttermilk
  • 2 tbsp ginger-garlic paste
  • 3 cups all purpose flour
  • 3 eggs, whisked
  • Salt
  • Pepper
  • Oil for frying

Bbq sauce:

  • 2 cups ketchup
  • 1 tbsp garlic powder
  • onion powder 1 tbsp
  • 1 tsp dijon mustard
  • 2 tbsp honey or maple syrup
  • 1 tsp cumin- coriander powder mix
  • 2 tbsp hot sauce
  • 2 tbsp white wine vinegar
  • 30ml JD whisky

Method:

  1. Marinate chicken wings in buttermilk and ginger-garlic paste and salt. Wings should be completely immersed in the buttermilk. Marinate for 12 hours minimum.
  2. Take 3 eggs and ½ cup water. Whisk, set aside.
  3. In a bowl, mix flour and some salt-pepper.
  4. Bread the wings by dusting in the flour first, then whisked egg. Then flour again. Again dip in the eggs, and one last time roll in the flour. So 3x flour and 2x eggs. Flour-eggs-flour-eggs-flour. This will make your wings crispy like KFC.
  5. Heat some oil and fry the wings on high heat.
  6. Once cooked, toss them in your homemade bbq sauce and enjoy with a glass of cold beer.

For bbq sauce:

Mix all the ingredients in a pot, add 1 cup water and boil for 5 to 7 minutes. Cool down and store in an air tight jar.
